Spring onions, or scallions, have a milder taste than onions and are used in most cuisines around the world in both raw and cooked forms. Scallions are native to Asia and have been first described in Chinese herbal literature 2,000 years ago. Spring onions grow best in the cooler months and can be harvested when the leaves begin to bend or when they have become 6 inches tall. As the bulbs become bigger, the green onions will become stronger in flavour. To harvest them, just pull them from the ground.
