Cauliflower is an ancient vegetable that humans have been cultivating since 6th century BC in various parts of the world, but was introduced in India in 1822 from England by the British. It has a high content of vitamin C and moderate levels of several B vitamins. Cauliflower varieties available in India can be grown either in the monsoons (July-August) or before winter (October-November) and take about 2-3 months to be ready. Our favourite cauliflower recipe is the Bharwan Gobhi which is cauliflower stuffed with khoya and cheese, bathed in batter and deep fried. What's yours?
