Carrots originated in Central Asia and its wild ancestors are like to have been first found in present day Iran and Afghanistan. When they were first cultivated, they were grown for their aromatic leaves and seeds rather than their roots. But over time, carrots have been domesticated through selective breeding over the centuries to reduce bitterness, increase sweetness and minimise the woody core and are now consumed predominantly raw as part of various salads. Carrots take about 2 months to be harvest ready and prefer cool climates but with a full sun.
